Spinach Salad with Orange, Carrot & Sesame


6 cups Baby Spinach
2 Scallions, sliced thin
2 Carrots shaved into ribbons
½ teaspoon finely grated Orange Zest
1 Orange peeled and sectioned
1 Orange peeled and sectioned
¾ teaspoon Mayonnaise
1 teaspoon LQ Olive Oil Champagne and Honey Mustard or Dijon
¼ teaspoon Salt
3 tablespoons Blood Orange Olive Oil
1 ½ tablespoons LQ Olive Oil Toasted Sesame oil
1 tablespoon Sesame Seeds, toasted


Place carrots, spinach, orange segments and scallions in large bowl.

Combine orange zest, vinegar, shallot, mustard, mayonnaise and salt in small bowl. Whisk until mixture is fully emulsified.

In another bowl, put olive oil and sesame oil and whisk. Whisking constantly, very slowly drizzle oils into mixture. If pools of oil gather on surface, stop addition of oils and whisk mixture well to combine, then resume whisking in oils in slow stream. Vinaigrette should be glossy and lightly thickened.

Pour dressing over spinach mixture and toss, sprinkle with sesame seeds and serve immediately.
